How to Cook
01. Hold a wonton wrapper in one hand and place about 1 teaspoon of filling in the center (use a bit less than you think — too much makes it hard to seal).02. Lightly brush water along the edges of the wrapper with your fingertip (this acts as glue; a cornstarch-water slurry also works).
03. Fold diagonally into a triangle, or fold in half to align the edges into a rectangle, pressing out any air as you seal the filling inside.
04. Take the two outer corners of the triangle (or rectangle) and fold them inward, overlapping them, then press gently to seal (this creates the classic ribbon-like shape).
05. When arranging the wrapped wontons on a tray or plate, leave space between them so they don't stick together, and cover with a damp cloth to keep them from drying out until ready to cook.
For soup wontons, boil them (about 2–3 minutes after they float) and serve directly in the broth; for pan-fried wontons, cook them the same way as the gyoza method.
